Although I’ve been anxious to go to a Farmer’s Markets here on the West Coast, we haven’t been able to. However, I have been able to test out some fresh salsa and guacamole recipes! I’m typically not a fan of guacamole, the smooth texture is bothersome to me, but making it myself means I can add some variance to it.

3 avocados – peeled, pitted, and mashed
2 lime, juiced or about 4 oz juice
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
1 tomatoes, diced
1 teaspoon minced garlic

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Refrigerate before serving.

A tip for leftovers-

Add 3 T salsa or guacamole, 1 slice of provolone cheese, cooked boneless chicken or turkey to a pita bread and bake on 350 for 10-15 minutes. A delicious and healthy dinner!



I’m also usually afraid of salsa because when it comes to spice, I’m a baby. However, with an abundance of fresh produce and a brand new food processor, I experimented with a couple of salsa recipes before settling on one I liked. Loaded with vegetables and made with no preservatives makes salsa a healthy and fun snack.

1 mango – peeled, seeded and diced
5 medium tomatoes, diced
1/2 jalapeno pepper, seeded and minced
1 Green Pepper, seeded and diced
1 T chopped fresh cilantro
3 cloves garlic, minced
1 teaspoon salt
2 T fresh lime juice
1/2 chopped onion
3 T olive oil
I used a mini food-processor to get the veggies uniformly and finely diced.

In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. Refrigerate before serving

Don’t forget to put your own twist on these dishes, I’ve tried cucumbers and red peppers!
